James Brown is interested in all aspects of the tea industry. He is especially fascinated by how the tea plant responds to it's environment both by climate and cultivation practices producing various flavor and medicinal compounds within the leaves. Those compounds are enriched, converted or eliminated during processing producing a vast array of flavorful and pharmacological profiles. The extreme of these is in Pu'er which adds a mixed organism fermentation and extensive ageing to completely reshape the complex finished product.
